Semi-Vegan Banana Cupcakes

As a vegetarian, I already don't eat meat. Lately, however, I'm attempting to move toward full veganism. I found a great article on egg substitutes here before baking cupcakes for my first clothing swap the other night. Two suggestions are mashed banana and unsweetened applesauce; I decided to experiment using both.

Ingredients (makes 12):
1 1/2 cups water
1/3 cup vegetable oil
1/3 cup mashed banana
3 tablespoons unsweetened applesauce
1 box white cake mix

Preheat oven to 350 F.
Spray cupcake pan with no-stick cooking spray.
Blend ingredients in a large bowl until moistened.
Whisk by hand for two minutes.
Plop mixture into the pan.
Bake for 22 minutes.

If you follow my exact recipe, they will taste like sweet banana bread. If you don't like banana, I suggest only using applesauce, and it should taste more like the white cake it's meant to be. I didn't frost them because they were that yummy without!

{It would be wrong of me to claim that these are truly vegan, because the boxed cake mix does have less than 2% of nonfat milk in its ingredients.} Enjoy, friends!
